An easy and fun breakfast meal-prep recipe! You can skip the red pepper flakes, tomatoes, and/or pepper to reduce possible issues at the beginning of your “detox”. This is a great recipe for meal prep for the week to make sure you’re eating breakfast and starting your day off with smooth energy.

Ingredients

  • Olive oil spray, for muffin tin

  • 2 zucchini, peeled into 1/8th inch strips

  • ¼ lb ham, chopped

  • 1 small shallot, minced

  • ½ cup cherry tomatoes*, quartered (optional)

  • 8 eggs

  • ½ cup heavy cream*, yogurt, or milk

  • 2 tsp salt

  • 1 tsp black pepper*

  • ½ tsp dried oregano

  • 1 pinch red pepper flakes*

  • 1 cup shredded cheese; I like cheddar

Preparation

  1. Heat the oven to 400° and lay out the strips of zucchini on a grate over a baking sheet and salt them then put them in the oven to dry out a little for about 10 mins.

  2. Grease a muffin tin and prepare the ham, shallots, and tomatoes. 

  3. Whisk together eggs, salt, pepper, heavy cream, oregano, and red pepper flakes in a medium bowl. 

  4. Once the zucchini strips are dried out, use them to line the inside and bottom of the muffin tin with zucchini strips, to form a crust. Sprinkle cheese, then ham, shallots, and cherry tomatoes inside each crust. 

  5. Pour the egg mixture in each hole to fill just shy of the top.  

  6. Bake for 30 minutes.

  7. Pull out and sprinkle with a little remaining cheese. 

*Ingredient Discussion

PEPPER: Pepper can be potentially inflammatory or higher in nickel. Try white pepper.

TOMATO: This is a nightshade and can be inflammatory to some. Consider testing later in detox.

RED PEPPER FLAKES: This is a nightshade and can be inflammatory to some. Consider testing later in detox.

CREAM, CREAM CHEESE, & SOUR CREAMS: Check the labels on these; Many can have problematic added ingredients like soys, gums, carrageenan, etc that may impact gut health. Try to find products that exclude these.
